Calamares is the one of the most famous seafood dishes in the Philippines, Usually it is often served in bars and other events as a food appetizer or as a finger foods when drinking alcoholic beverages, Filipinos adapted this type of dish from the Spain But, the add the twist of adding a calamansi. Here are my favorite Calamares Recipe.

Calamares Recipe Ingredients:

  • 1 kg (2 lb) medium squid, clean it thoroughly (head, ink sacs and tentacles discarded), peel off the outer purple skin (do not cut squid open)
  • Juice of 3 – 4 calamansi
  • 2 egg whites
  • 125 g (1 cup) plain (all – purpose) flour
  • 250 ml (1 cup) oil
  • Small amount of pepper and salt to taste
  • Lettuce (this is optional)

Calamares Recipe Procedure:

[dropcap type=”1″]1[/dropcap]Slice the squid into 1 cm or half inches rings. Marinate the squid in calamansi juice for 15 – 30 minutes.

[dropcap type=”1″]2[/dropcap]Dip the sliced squid rings in the egg whites, and then dredge it in the flour.


[dropcap type=”1″]3[/dropcap]Heat oil in a pan or wok and then when the oil gets hot, fry the squid rings in a small pieces at a time until it becomes to golden yellow. Fry all squid ring for about 1 minute to avoid overcook because the squid rings may become tough.

[dropcap type=”1″]4[/dropcap]When the squid ring is cook, remove the squid rings from the pan with oil and drain on tissue or a paper towels. Season it with pepper and salt for better taste.

[dropcap type=”1″]5[/dropcap]If desired, place on a bed of lettuce. You can serve this dish with Garlic Mayonnaise Dip (see page 4) as a food appetizer or as a finger foods when drinking liquors.

Preparation time: 15 – 30 minutes marinating

Cooking time: 15 – 20 minutes
